My son Chef Arvie and I had a lunch date last week ... After a 30 minute discussion where to go....we decided to go for a Mexican Restaurant since it's been a while since we had Mex food.... Now, we need to decide what resto should we go... A lot of restaurants claim that they have the authentic Mexican cooking but still when you open their menu just a little of true blue mexican dishes are listed. Again, after a few minute of discussion I drove straight to new Mex resto....
For a start they provided us with a bunch full of chips and salsa...while working on your taste buds deciding what to order for your main course. While enjoying every chip dipped into the salsa...It gave me an idea I can also serve this at home to my hungry friends.Something I know that they will enjoy while watching our favorite TV show or just chatting....Simple but enjoying...try it....
Crunchy and crispy these are excellent companions for your favorite salsa
Prep Time: 1 minute
Cook Time: 5 minutes
Total Time: 6 minutes
Ingredients:
- 12 corn tortillas cut into 6-8 wedges
- oil for frying
- salt to taste
Preparation:
Pan frying-
Heat oil over medium-high heat for about a minute. Drop a crumb of tortilla into the oil, if it sinks, it's not hot enough. If it bubbles and comes to the top, it's perfect.
Slide pieces into oil using a slotted spoon or spatula just a few at a time. Let pieces fry until golden brown and crispy, less than one minute. Drain on paper towels and sprinkle with salt. Serve immediately or store in a tightly covered container.

- 2 cups seeded, chopped tomatoes (6-7 medium tomatoes)
- the leaves from one bunch of fresh cilantro, chopped
- 6 cloves fresh chopped garlic
- 1/2 an onion chopped
- 1 jalapeno, finely chopped
- 1/2 teaspoon salt
- about 1 tablespoon lime juice
Preparation:
Mix all ingredients until well incorporated. Refrigerate overnight for maximum flavor.
